Lemon and anchovy dressing

Ingredients:

4-6 good anchovy fillets (Ortiz brand is a favourite)

Juice of 1/2 a lemon

1 small garlic clove, peeled

Pinch of salt

60-70ml good extra virgin olive oil

Method:

Crush the garlic clove with the salt in a mortar and pestle, next add in the anchovy fillets and crush them as well to form a paste. Add in the lemon juice and mix to combine. Slowly stream in the olive while while mixing with the pestle. Finish with freshly cracked black pepper.

Use this to dress your favourite salads. Best on something hearty and bitter like radicchio but also great on cos lettuce for a Caesar like dressing. Delicious with boiled potatoes and boiled eggs as well.
